Želodec as a culinary specialty
(conclusion from dr. Stanislav Renčelj)
Želodec has been a ritualistic part of dining for centuries. It was included in the Easter food basket for blessing and was consumed on big holidays and weddings.
A good želodec is and was the pride of every household. Nowadays, želodec is also part of a rich meal after hard work.
Easter plate – cooked želodec with horse radish
Serving was once very simple, rural: every family member of guest was given a slice of bread, a thick piece of želodec and a knife. Everyone should then cut their own želodec apart and enjoy.
The delicious food scent had filled the entire house with warmth. It was a real feast.
